Brawurst Hot dog

Celebrate BBQ season with bratwust hot dogs. Garnish them with the classics: sauerkraut, onions and mustard. Grill the buns for more texture and to bring out even more flavours from the bun. These hot dogs are served with crispy oven baked fries.  Bratwurst sausages from Pine View Farms are made artisanaly with simple ingredients.

You will need

Bake the fries: Wash and rinse all produce. Turn on the oven to 430F. Line a baking sheet with a non-stick sheet or parchment paper. Peel the potatoes and cut into fry shape pieces, about 1 cm thick. Place the fries on the baking sheet. Drizzle with oil (1/2 tsp, 1 tsp, 1 1/2 tsp), salt (1/8 tsp, 1/4 tsp, 1/2 tsp), and pepper (1 pinch, 1/8 tsp, 1/4 tsp). Combine to ensure even coating and place an even layer to ensure the potatoes cook evenly. Bake in the oven about 20 minutes or until the potatoes are fully cooked and start to become golden. Keep the oven on to heat the buns.

Cook the sausage: Heat the BBQ to medium. Cook the bratwurst sausage for about 10 minutes, turning them halfway, or until they are fully cooked.

Cooking in a pan:  Place the pan on medium heat and add oil (1/2 tsp, 1 tsp, 1  1/2 tsp). Place the bratwurst sausage in the pan and bake on medium heat for about about 10-12 minutes or until fully cooked. Cover the pan to minimize oil splater.

Note: Ensure the bratwurst sausage are cooked to a minimal internal temperature of 160F.

Prepare the onions: Peel the onion and dice as small as possible –  about 1/2 cm dices. The small dices ensure the onion flavour does not overwhelm the flavour of the sausage and other toppings.

Toast the buns: . Cut the buns and open them so the toast evenly. Once the bratwurst sausage have about 1 minute left to cook, place the buns face down on the BBQ grill. Ensure the buns are not directly exposed to the heat so they do not burn. Grill the buns for 30 seconds to 1 minutes.  

Oven: Place the cut and open buns on the oven grill until they are toasted – about 1 minute.

Assemble and serve: Garnish each hot dog with  sauerkraut, onion and mustard. Serve with a side of baked fries.

Set up & cut the vegetables:  Preheat the oven to 350F. Wash and dry the vegetables. Cut the onion and bell pepper in small* dices. In a pot, on medium heat, add oil. *Note: It is important to cut the vegetables in small dices to ensure they cook quickly.

Add 1/4 to 1/2 cup, 1/2 cup to 1 cup, 3/4 cup to 1 1/2 cup of water or as desired. Let simmer 20 minutes*.

*Covering the chili will keep it thinner, uncovering will make it thicker.

Bake the corn chips: Cut the corn tortilla in wedges. Place the wedges on a baking sheet and bake 10 mintutes.

Prepare the toppings & warm up the bunsSlice the tomato. Separate the cilantro leaves.

Cut the ciabatta buns in 2 and place them on a baking sheet, cut side down. Heat the ciabatta buns in the oven for about 1-2 minutes.

BBQ: Heat the ciabatta buns on the BBQ about 1 minute or until toasted.

Assemble & serve: Place a patty on each ciabatta bun. Garnish with guacamole crema, tomato slices, cilantro, onions and fried jalapeno. Top each burger with the top bun. Serve with a side of baked fries.

What’s better than a meatball sub?  This black bean sub is packed with the flavours of a traditional meatball sub but super heatlhy with 38% of your daily recommended fibers and over 23 gr of protein. These tender black bean meatballs are coated with the ZestyKit signature tomato sauce and dressed with a creamy chipotle sauce. Serve this sub with a side of garlicky and steamed broccoli.

Preparation: Rinse and dry all produces. Preheat the oven to 435° F. Dice the onion and the mushroom in ½ cm dice.

Cook the onion & mushrooms: In a pan, add the oil (1/2 tsp, 1 tsp), onion, mushrooms, salt (1/8 tbs, 1/4 tbs) and pepper (1 pinch, 1/8 tbs). Cook on medium heat until the onion is tender, about 6 minutes.

Assemble the meat balls Drain and rinse the black beans. In a medium bowl, roughly mash the black beans with a potato masher or fork. Add the.egg (1, 2)*, panko and Italian spices, the cooked onion and mushrooms. Combine. The texture should be soft but firm enough to form balls.

If the mixture is too crumbly, add 1 tsp water at a time until desired texture is achieved.

If the mixture is too wet, cut a slice of bread into small 1/2cm dices and add to the mixture in 1/4 cup increment, combining between each addition until desired texture is achieved. 

* For vegan, replace 1 egg by combining 1 tbsp ground flax (provided) & 2 tbsp hot water and letting it sit about 2 minutes. To replace 2 eggs, combine 2 tbsp  ground flax (provided) & 1/4 cup hot water and let sit about 2 minutes.

Form the Black Bean BallsUsing the black bean mixture, form balls of about 1 tbsp each (10 balls, 20 balls). Place the black bean meatballs on a lined baking sheet. Cook for 20 minutes or until the balls are firm on the outside.

Cook the broccoliWhile the black bean meatballs are cooking,  wash and dry the pan. Cut the garlic in thin slices and the broccoli into bite size. Add 1/2 tsp oil to the pan. On medium heat cook the garlic until it becomes fragrant – about 30 seconds. Watch the garlic to ensure it does not burn. Add 1 to 2 tbsp water (1 1/2 tbsp, 3 tbsp) and the broccoli to the pan. Cover and let steam about 3-4 minutes. Garnish with salt (1 pinch, 1/4 tsp) and pepper (1 pinch, 1/4 tsp).

Assemble & serve: When the black bean meatballs have 5 minutes left in the oven, heat the buns in the oven for about 3 minutes.

Heat the signature tomato sauce in a covered bowl in the microwave for about 1 minutes. In a medium bowl, place the cooked black bean meat balls and the warm signature tomato sauce and combine to coat.

Assemble the subs. Drizzle the chipotle mayo sauce on the beanballs and serve with the broccoli.

These burgers are a delicious and easy meal that the whole family will love!  The savoury toppings make them perfect for cold days. Each burger is topped with a black garlic sauce, arugula and goat cheese. The burgers are served on ciabatta buns with a side of oven fries.

Setup & cut the fries: Wash and rinse all produce. Preheat the oven to 450F

Peel the potatoes and cut in fries shape, 1/2 to 1 cm thick.

Bake the fries: Place the fries on a lined baking sheet. Drizzle with oil, season with salt & pepper.

Place the fries in an even layer. Bake for 25 minutes.

Cook the patties (BBQ or pan):

BBQ: Grill the pork & beef patties on the BBQ about 5 minutes per side or until fully cooked.

Pan: Place a lightly oiled pan on medium heat. Place the pork & beef patties in the pan and bake on medium heat about 6-7 minutes per side.

Note: Ensure the beef patties are cooked to a minimal internal temperature of 160F.

Warm up the buns:
BBQ: Heat the ciabatta buns on the warm BBQ with the heat off for 1-2 minutes.

Oven: Heat the ciabatta buns in the oven at 450F for 1-2 minutes.

Assemble and serve: . Place a patty on each bottom bun. Garnish each burger with  the truffle & black garlic sauce, mixed greens and goat cheese. Top each burger with the top bun. Serve with baked fries.

Prepare the vegetables:  Wash and clean all produce. Peel the carrots. Slice the mushroom and celery in slices of about ½ cm. Dice the onion and the carrots in dice of about ½ cm*. 

*Note: Cutting the vegetable in small pieces reduces cooking time.

Cook the onions:  In a pot, add oil (1/2 tsp1 tsp) and onion. Cook on medium heat until the onion is tender, about 5 minutes. Add the smoke chili spice blend*, salt (¼ tsp, 1/2 tsp) and pepper (1/8 tsp, 1/4 tsp and cook for 30 seconds.

*Note: If you don’t like spicy dished reduce or omit the smoke chili spice blend.

Cook the vegetables: Add the carrots, mushrooms, celerywater (2/3 cup, 1 1/3 cup)*. Cook about 5 minutes.

*Note: You can adjust the amount of water based on the desired thickness. For a thicker chili, use about (1/2 cup, 1 cup) water. For a thinner chili, use (1 cup, 2 cup) water.

Add the beans and tomatoes:Rinse the six bean medley. Add the tomato sauce & diced tomatoes and six bean medley to the pot. Bring to a boil and let simmer on medium heat about 20 minutes, until the carrots are cooked. For a thinner chili, let simmer with the lid on.For a thicker chili, let simmer longer. 

When the chili has about 10 minutes left to simmer, preheat the oven to 350 °F to heat the ciabattas.

Warm the ciabattas, garnish and serve: Place the ciabattas on a baking sheet and heat them in In a warm oven at  350 °F for 3-5 minutes. Cut the green onion in thin slices. 

Serve the chili in individual bowls, garnish with green onion slices. Serve the chili with the warm ciabattas.

Cook the beefIn a pot, add the oil (1/2 tbsp, 1 tbsp), heat on medium/high heat. Add the ground beef & salt (1/4 tsp, 1/2 tsp) cook about 8 minutes, stirring regularly, until the ground beef is cooked.

Note: Ensure the ground beef is cooked to a minimal internal temperature of 160F.

Italian sausage & pesto pizza

It’s pizza night! This Italian sausage and pesto pizza is going to be a favourite. Take out has nothing on this comfort dish. This pizza is made with fresh pizza dough from the Italian Star Deli and topped with Italian sausage, pesto, baked mushrooms, onions, bell peppers and mozzarella. Rolling this pizza dough and pilling it high with roasted vegetable will awaken your inner chef.

Zesty Tip: Pizza dough: 

  • FREEZE your dough If you will not use it by the best before date.
  • WARM your dough to room temperature for an hour before rolling it. It will keep its’ shape easier.

Setup & prepare the vegetables:  Preheat the oven to 400F. Rinse and dry all produces. Dice the onion. Slice the bell pepper and the mushroom.

Cook the vegetables: Place the onion, bell peppers and mushrooms on a lined baking sheet. Drizzle the vegetables with oil, season with salt & pepper and the Italian Spice blend. Combine to evenly coat the vegetables. Cook for 15 minutes. Once the vegetables are cooked, take them out of the oven and increase the temperature to 450F to bake the pizza.

Cook the sausages: In an oiled pan on medium heat, add the Italian sausages. Crumble the meat and cook for 10 minutes

Note: Ensure the sausage is cooked to a minimum of 165F.

Roll the dough: lightly dust a clean counter surface with flour (1 tbsp, 2 tbsp, 3 tbsp). Lightly coat the pizza dough with flour. Roll the dough with a rolling pin to 1/2 cm thick. If the dough is sticky, dust it and the counter with more flour. Finish shaping the pizza dough in the baking sheet.

Gluten- Friendly: Skip this step. The dough is ready for toppings.

Assemble, bake & serve: Transfer the pizza dough to the baking sheet. Use your hands to pull the dough and shape it as desired. Place the pesto evenly across the pizza. Garnish with the Italian sausage, the mushrooms, onion, bell peppers and mozzarella. Bake in a 450F oven for 15 minutes. Cut and serve. Gluten-Friendly: Bake 8-10 minutes or until the mozzarella is golden. *Gluten Friendly 2 portion plan note: the Gluten Free Pizza dough is inside your delivery bag as it is too large to fit inside the meal box.
