Feeling like Thai today? Forget the take-out and try this delicious Pad see ew! Pad see ew is a popular thai street food thats is similar to pad thai but is made with a slightly different sauce and extra thick noodles. This dish is filled with bold savoury and fresh flavours. This dish is super quick and easy to make. Forget take-out today and make this at home for the whole family to enjoy.
Cook the tofu: Place the water (4 cups, 8 cups, 10 cups) in a large pot an bring to a boil for the noodles. Drain the tofu. On a cutting board, cut the tofu in 2 cm dices. Place the cornstarch on a plate with salt (1 pinch, 1/8 tsp, 1/4 tsp). Combine the cornstarch and salt. Place a few tofu dice on the cornstarch mixture and coat each tofu dice with cornstarch. Heat the oil (1 tsp, 2 tsp, 3 tsp) in a large pan or pot on medium heat. Place the cornstarch coated tofu dice in the pan or pot. Cook about 2 minutes per side on medium heat. Place the cooked tofu aside in a small bowl.
Preparation: Wash and clean all produce. Slice the onion (for 2 portions use half the onion) and the mushrooms in 1/2 cm slices. Thinly slice the thai chili pepper in 1/4 cm slices.
Cook the vegetables and noodles: In a large pan or pot, add the oil (1/2 tsp, 1 tsp, 1 1/2 tsp) and heat on medium/high. Add the onion and mushroom to the pot. Stirring regularly, cook on medium heat for about 5 minutes, until the onion is tender. Add the chineese broccoli and cook an additional 3 minutes. Add the pad see ew sauce and cook an additional 2 minutes stirring regularly.
When the water is boiling, add the thick rice noodles and boil for 4-5 minutes. Once cooked, drain the noodles in a strainer.
Combine the pad sew ew: Add the tofu dices, the thick rice noodles to the vegetables and combine.
Prepare the garnish: Cut the lime in 6 wedges, roughly chop the cilantro and peanuts.
Garnish & Serve: In individual bowls, place the noodles and vegetables. Garnish with the slices of thai chili pepper, the peanuts, lime wedges, and cilantro. Serve.
