Preparation

Prepare and cook the onions and garlice: Cut the onions in 1 cm dice. Mince the garlic. In the large pot on medium heat, add the oil (1 tbsp) and cook the onion and garlic until soft – about 5 minutes.

Prepare the cooking liquid: Add the dark beer and maple and mustard mix, spice blend and water (1 cup). Bring to a boil uncovered stirring regularly.

Cook the ham: Place the ham in the pot. Cover and let simmer on low for about 2 hours, until the ham is tender. Move the ham every 30 minutes to ensure it does not stick to the bottom. Once the ham is done, remove it from the pot and remove the skin. Set the ham aside.

Transform the cooking liquid into the glaze: Preheat the oven to 400F. Place the pot back on medium-high heat and bring to a boil uncovered. Reduce the liquid by about half, about 10-15 minutes. Add the maple syrup and set aside.

Transform the cooking liquid into the glaze: Place the ham in a deep roasting pan. Baste the ham with the reduced sauce (glaze). Bake in the oven uncovered for 15 to 20 minutes, basting frequently, until the ham is dark golden and has a caramelized glaze.
