Carrot Cake

Carrot cake is a delicious way to celebrate the arrival of spring! This tasty cake is easy to make and can easily be made with many local ingredients. We strongly recommend locally sourced carrots as they are the juiciest and sweetest available

  • Serves 12 People


  • 2 1/2 cups flour
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp cinamon
  • 1 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground clove
  • 1 cup vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 1 tsp vanilla
  • 3 cups gratted carrots
  • 1 cup chopped wallnuts


  1. Step #1 Heat the oven to 350F. In a bowl, combine the flour, baking soda, spices and salt. Set asside.
  2. Step #2 In a separate bowl, add the oild, sugar, eggs and vanilla. Whip for about 5 minutes with the electric mixer.
  3. Step #3 Add the dry ingredients in 2 batches to the egg mixture. Combining between each addition. Add the carrots and wallnuts. Combine.
  4. Step #4 Butter and flour 2 9 inches cake pans. Divide the batter equally between the 2 pans. Bake at 350F for about 30 minutes or until the edge of a knife comes out clean from the middle of the cake.
  5. Step #5 Wait 10 minutes before removing the cake from the cake pan. Let cool completely on a cooling rack.

Cream Cheese Icing

Cream cheese icing

Cream cheese is a delicious classic! I can’t think of carrot cake without a lushious cream cheese icing. This icing comes together within minutes. 

Makes: 2 cups

  • Total Time 5 Minutes


  • 2 1/2 cups Icing sugar
  • 1/2 cup butter or margerine
  • 1 pack cream cheese (113g)
  • 1 tsp vanilla


  1. Step #1: Add the cream cheese and butter to a bowl. Combine with an electric mixer until smooth.
  2. Step #2 Add the vanilla. Combine. Gradually add the icing sugar. Mix with the electric mixer until the icing is smooth. If the icing is soft, you can cool it in the refregirator to make icing the cake easier.
